People remembered The Iron Lady before they ever tasted what came out of her.
Kristin helped turn Tilly into a character, not just a cooker. The naming contest got people watching, talking, and waiting to see what would come off the racks next.
That is still the point: give the town something real to follow, then back it up with brisket, ribs, pork, bison, chicken, and specials worth showing up for.

The way she works
Reverse flow, high elevation, and a cook who pays attention.
At roughly 7,100 feet, barbecue asks more from the pitmaster. Moisture, airflow, wind, and time all matter. Tilly gives us the control to cook brisket, pork, ribs, bison, chicken, and one-off specials with consistency, even when Wyoming weather gets ideas.
She is not a prop. She is the heartbeat of the restaurant.
